If you haven’t heard of cracker candy by this point we will assume you’ve been living under a rock. The cracker toffee seems to be everywhere around the holidays, and for good reason– it’s absolutely delicious. The sweet and buttery toffee combined with the salty cracker base is absolute perfection. And while it’s usually made with a layer of chocolate on top, we got to thinking that an almond version just might knock it outta the park. Spoiler alert: it sure did. The start of this recipe sticks pretty close to the original cracker candy. You’ll arrange a base of club crackers so that they cover an entire cookie sheet. While you could use saltines or graham crackers here, the sweet buttery flavor of club crackers really works best. The toffee sauce comes together with a quick boil on the stovetop, then you’ll mix in the almond extract and pour it over the cracker base. Pop that sheet in the oven until it’s good and bubbly, then it’s time to layer on the sliced almond.

Now for the hard part– letting the candy cool! You’ll want to give it a good 1-2 hours to fully set, then you can dust the top with powdered sugar to really lean into the almond croissant vibes.
