Lemon Cheddar Broccoli

If there are two things that go together perfectly it’s definitely cheese and broccoli. The crisp and creamy flavors together just make magic somehow. And, adding lemon to the mix just makes it even better.

The citrus offsets the other flavors to give it much more depth while keeping this dish feeling light. It’s the same concept behind Polish green beans and creamy lemon pasta bake, too.

Lemon Cheddar Broccoli

The keystone of this dish is the creamy sauce made with cheddar cheese, lemon juice, and lemon zest. To make this amazing topping we first make a roux with flour and butter before slowly whisking the milk. Then the cheese, spices, and lemon zest come in after.

Making a sauce like this not only makes the cheese go further, but it also gives us a chance to incorporate other flavors into the dish.

Lemon Cheddar Broccoli

Once the sauce is made all you have to do is pour it over some steamed broccoli for a side side that will make any dinner extra special. Add a little extra lemon zest on top for even more citrus flavor.

This broccoli goes well with chicken or with beef or fish. It’s even good alongside sandwiches or baked potatoes. In fact there are very few dinner or lunch mains that wouldn’t pair well with this versatile dish.

Ingredients
  • 2 tablespoons salted butter
  • 2 tablespoons all-purpose flour
  • 1 whole cup milk
  • 3 1/2 tablespoons lemon juice
  • 1 cup (4 oz) cheddar cheese, shredded
  • zest of 1 lemon, plus extra for garnish
  • pinch white pepper
  • salt and black pepper to taste
  • 1 large head broccoli (1 lb), steamed
Preparation
  1. Melt butter in pan over medium heat. Whisk in flour and cook for 1 minute, stirring constantly. Whisk in milk 1/4 cup at a time. Whisk in lemon and mix until no lumps remain.
  2. Remove from heat and whisk in cheese, lemon zest, white pepper, salt, and black pepper.
  3. Pour over broccoli and serve piping hot. Garnish with more lemon zest if desired.
