This is a recipe that is so simple that you can hardly even call it a recipe, but you can be sure that these few simple ingredients really bring out the best in red cabbage. You can think of Israeli Red Cabbage kind of like a very simple slaw – it’s cool and crunchy, a bit creamy, and works as a topping on sandwiches and burgers as well as it does when it’s served as a side. It’s delicious stuff, and so quick and easy to make.
You only need four ingredients to make this! (Five if you count salt.) First up is the red cabbage, which should ideally be sliced very thin. That’s tossed with a combination of mayo, sugar, and lemon juice, and your work is done. If you let it all sit together for a bit, the flavors have a chance to meld and some of the cabbage juices turn nice and pink, but it’s not wholly necessary.
It’s the perfect sweet and tangy balance to a vibrant vegetable that can sometimes come off as bitter. There’s so much crunch here and such a nice rustic flavor – it’s the ideal simple side.
