There’s something totally irresistibly about the classic Greek Salad. Fresh and zesty Mediterranean flavors, crisp greens, crunchy cucumbers, and plentiful tomatoes, it’s easy to see why it’s a favorite around the world. And the ingredient that undoubtedly ties it all together is the dressing. While store-bought will do in a pinch, we strongly believe homemade is the way to go whenever possible. Luckily, it’s a dressing made with ingredients we typically have on hand already and super easy to whip up!

The base of this dressing will be a simple combination of extra virgin olive oil, red wine vinegar, and fresh lemon juice. The combo creates a bright and tangy flavor that’s then kicked up a notch by a bit of dijon mustard, garlic, and a sprinkle of cayenne pepper. Finally, salt and pepper are added to suit your taste. If you’re loading your salad up with feta we recommend going easy on the salt since feta cheese is pretty salty on its own!

Ingredients
  • ½ cup olive oil
  • 3 ½ tablespoons red wine vinegar
  • 1 ½ tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • Black pepper to taste
Preparation
  1. Add all ingredients to a small bowl or liquid measure cup with spout.
  2. Whisk for 1-2 minutes until well blended. Taste and add more salt and pepper to your preference.
  3. Serve immediately or store in a sealed container in the fridge until ready to use. Stir before serving.
