If you love cinnamon buns and raspberry tarts or cheesecake, this recipe may just be your new favorite. Twisted released a tutorial video for how to make glazed raspberry cheesecake swirl buns and they’re everything you might want from a dessert.
They’re similar to a cinnamon bun, but with a sweet and tangy twist.
Thankfully, you don’t even need to be an experienced baker to handle this project. There are only three sections to the recipe, which makes things incredibly simple: The dough, the icing, and the raspberry filling.
For the raspberry filling, both fresh or frozen raspberries can be used.
During the baking process, there are two separate periods of rising time. The rise time helps the buns become extra light and airy.
Glazed Raspberry Cheesecake Swirl Buns
Makes 12 buns
Ingredients:
For the dough:
2 cups warm whole milk
1/2 cup granulated sugar
2 tablespoons dry yeast
1/2 cup unsalted butter, very soft
2 large eggs, room temperature
1/2 teaspoon fine salt
4 1/2 cups all-purpose flour
For the filling:
1 cup cream cheese, room temperature
1/2 cup unsalted butter, room temperature
1/2 cup granulated sugar
1 10 ounce package (about 2.5 cups or 300 grams) frozen raspberries, do not defrost
2 tablespoons cornstarch
For the icing:
1 cup powdered sugar
1/2 cup heavy cream, room temperature
Preparation:
To make the dough:
1. Grease the sides and bottom of a 9×13-inch baking pan, set aside.
2. In a large bowl, combine milk, sugar, and dry yeast.
3. Add in butter, eggs, and salt, stirring to combine.
4. Add in the flour, stirring until the flour incorporates with the wet ingredients and forms a soft dough.
5. Lightly flour a surface with flour and knead the dough until it becomes smooth and shiny in appearance, has an elastic touch, and no sticky or lumpy parts remain.
6. Spray a clean bowl with baking spray and place the dough in the bowl. Cover with plastic wrap and set the dough in a warm space, letting it rise for 1 hour.
To make the filling and prep the rolls:
1. In a large bowl, beat cream cheese, butter, and sugar until smooth and lump-free, about 2 to 3 minutes, and set aside.
2. On a lightly floured surface, roll the dough into a 12×18-inch rectangle that’s 1/2-inch thick.
3. Spread the cream cheese mixture onto the dough, leaving a small 1/2-inch border unfrosted.
4. In a bowl, combine raspberries and cornstarch until the raspberries are completely coated.
5. Gently spread the raspberries onto the dough, evenly distributing the berries as much as possible.
6. Starting from one lengthwise side, tightly roll up the dough, forming an 18-inch log.
7. Use a sharp knife to cut the dough into 12 even pieces.
8. Place the buns into the prepared pan and cover the pan with plastic wrap. Let the buns rise again, this time for 30 minutes.
9. While the buns are rising, preheat the oven to 400°F, and once the 30 minutes is up, bake the buns for 30 minutes.
To make the icing:
1. When the buns are baking, work on the icing. In a large bowl, combine powdered sugar and heavy cream, whisking until smooth and lump-free.
2. Once the buns are warm out of the oven, pour the icing over the buns and serve immediately.
