A dish that’s popular in Japan is donburi, which means bowl or rice bowl. These easy-to-make dishes are served over rice for a whole meal in one bowl. This ginger ground beef version comes together in minutes and has a complex flavor that you might not expect from such a short ingredient list.

There’s some ginger, some soy sauce, and some mirin, a sweet Asian cooking wine that gives a sweet flavor with a bit of acidity. There’s also some brown sugar in the recipe, too, for a little more sweetness.

Paired with the beef in ginger sauce is some frozen peas. Donburi is a little like bubble and squeak in some regards as you can make it from just about anything. This makes it a great dish to use up leftovers and bits from other recipes. So, if you don’t love peas or if you have some other frozen veggies you need to use up add those instead.

I could see adding broccoli, zucchini, or mixed veggies to the beef for a colorful and flavorful meal.

Ingredients
  • 1 lb ground beef
  • 1/4 cup soy sauce
  • 1 teaspoon brown sugar
  • 1 tablespoon mirin
  • 1/4 teaspoon garlic powder
  • 1 tablespoon fresh minced ginger or ginger paste
  • 1 cup frozen peas
  • 3 green onions, chopped finely
  • 3 cups cooked white rice for serving
Preparation
  1. Add beef to skillet and cook over medium heat until just beginning to brown, about 6 minutes.
  2. Add soy sauce, brown sugar, mirin, garlic powder, ginger, and peas to pan. Cook for another 7 minutes or until peas are thawed and beef is browned.
  3. Serve over rice and garnish with green onions.
