French Onion Cauliflower Bake

It’s easy to talk about getting more vegetables in your diet, but when it comes time to actually cook them it can be a struggle to complete the task at hand. But, with this French onion cauliflower bake you can make a low-carb veggie dish that will actually taste good. In fact, it tastes amazing.

Of all the recipes I’ve made recently this one is in my top ten without a doubt. This is most likely because I absolutely adore that French onion flavor! If you do, too, then this recipe might be just the thing your recipe box has been missing.

French Onion Cauliflower Bake

I was skeptical at how good this French onion sauce would be, but it turns out to not only be incredibly easy, but it’s also one of the best sauces of this type I’ve come across. If you only take one thing from this recipe the sauce is the real foundation of the whole dish.

If you wanted a creamy onion sauce for other recipes or to put on top of other veggies – or even to dip some bread into for an appetizer- this one is amazing.

But, this recipe doesn’t only rely on the sauce. This same mixture is enhanced with some Gruyère cheese for even more of that signature French flavor in the dish. You put half the cheese in the sauce and then top the cauliflower with that cheesy sauce. Then add the rest of the cheese on top of that. Oh, and if you don’t have Gruyère you can use Emmental or Swiss instead.

You may have to cover the casserole part way through the baking so that the lovely layer of cheese on top doesn’t get too dark. How crispy and golden you want your top crust is up to you. But, this comes out so creamy with a deep flavor from the Worcestershire sauce, fresh thyme, and browned onions in the sauce.

It’s a really satisfying side dish- or if you’re cutting back on meat this could be a great main dish, too.

Ingredients
  • 3 tablespoons unsalted butter
  • 1 onion, sliced
  • 1 1/4 cup vegetable or chicken broth
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1 1/2 teaspoons fresh thyme
  • 1/2 teaspoon black pepper, plus extra for cauliflower
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried onion flakes
  • 1 teaspoon salt, plus extra for cauliflower
  • 2 teaspoons Worcestershire sauce
  • 1 cup sour cream
  • 8 oz shredded Gruyere cheese, divided
  • 2 heads cauliflower, cut into florets
Preparation
  1. Preheat oven to 375˚F. Melt butter in a skillet over medium heat and add onions to pan. Cook for 5 minutes then add broth, spices, and Worcestershire sauce and stir well. Cook for 5 more minutes, then reduce heat to simmer and cook for 10 minutes more. Remove from heat and allow to cool for 10 minutes.
  2. Whisk sour cream into onions then stir in half the cheese. Place cauliflower into a greased 9”x13” baking dish and add salt and pepper to taste. Pour sauce over top. Sprinkle remaining cheese on top.
  3. Bake for 30 minutes or until cheese is beginning to brown around the edges. If top browns too early cover with foil part way through cooking.
