Ingredients
  • 4 cups grated carrot
  • ⅓ cup chopped parsley
  • 2 tablespoon olive oil
  • 1 lemon, juiced
  • 2 teaspoon honey
  • ½ garlic powder
  • ½ teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
Preparation
  1. In a large salad bowl, add grated carrot and parsley.
  2. In a small bowl, whisk together remaining ingredients for the dressing.
  3. Dressing salad and toss well to combine.
  4. Cover bowl and chill for a minimum of 45 minutes before serving to allow flavors to absorb.
