Mac and cheese is my ultimate comfort food. From the box stuff to the creamiest homemade version, nothing tastes better after a long day. I’m typically a bit of a mac and cheese purist, but I came across the idea of a Tex-Mex style mac and knew I had to give it a try. With a little experimenting, I landed on this Fiesta Slow Cooker Mac and Cheese, and wow, is it tasty. It’s loaded with real cheese and has a little kick from green chiles. The best part is that the slow cooker does most of the work for you!

Start out by boiling the pasta on the stovetop. You’ll want to slightly undercook it so it will hold up in the slow cooker. Check the cook time on the packaging and take a couple minutes off so it’s not quite al dente. Drain the pasta and add it to the slow cooker with the remaining ingredients. Give everything a good stir and set the temp to high. Now sit back and relax while your mac and cheese cooks!

Once the cheese is fully melted and the pasta is nice and tender, you’ll know the mac is ready to eat. Top off your bowl with hot sauce, cilantro, and tortilla chips for an added crunch. This recipe is perfect game days, parties, and potlucks, and is sure to be the star of the show. Give it a try for your next get together and I’m sure you’ll agree!

Ingredients
  • 1 lb elbow macaroni
  • 1 (10.5 oz) can cheddar cheese soup
  • 1 (10 oz) can diced tomatoes with chiles
  • 1 (4 oz) can green chiles
  • 3 cups Mexican blend cheese
  • 2 cup cheddar cheese
  • ½ cup sour cream
  • ½ cup milk
  • ¼ cup mayonnaise
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon cayenne pepper
Preparation
  1. In a large pot, boil pasta until almost al dente or 1-2 minutes less than the time directed on the box.
  2. Spray inside of slow cooker with nonstick spray.
  3. Add pasta and all remaining ingredients to slow cooker, stir, and set to low. Cook for 3 hours, stirring halfway through.
  4. Serve with hot sauce, cilantro, and crushed tortilla chips.
