There’s something so satisfying about a good chicken salad– the savory shredded chicken, crunchy veggies, and a good creamy dressing. It’s a deli staple for good reason. While the classic version will never let you down, sometimes you need a little variety in life and that’s where this Feta Chicken Salad comes in. With just a few easy tweaks to the standard recipe, this salad is transformed into a Greek-inspired masterpiece that’s creamy, tangy, and packed with flavor. Whether you’re serving it up as a light lunch over fresh greens or piling it high on a sandwich, this dish is bound to become a staple in your meal rotation.

While this dressing is still mayo based, we’ve added in dill, oregano, and garlic for some Mediterranean flare. Combined with the creamy feta it is seriously addictive. It’s the kind of simple, no-fuss dressing that pulls everything together without overpowering the fresh ingredients. To distribute all those flavors evenly, we recommend mixing the dressing in a small bowl first, then dressing the salad.

In a pinch you can serve the salad immediately after making it, but if you have time we highly recommend you cover the bowl and pop it in the fridge for at least an hour to really let those flavors meld. When you’re ready to eat, give it a good toss and this Feta Chicken Salad is ready to go. It’s a great option for meal-prepping or throwing together a last-minute lunch– everyone is sure to enjoy this one. Give the recipe a try and taste for yourself!
