Date Nut Bars

Combining fruit and nuts together is a cookie tradition that goes back centuries and in these classic date nut bars you get the sweetness of dates and the crunch of nuts in one tasty bar cookie. These bars have gone by many names, but they’ve been beloved for generations.

And, almost as good as the taste is the fact that because there’s no forming of the cookies themselves this recipe is very easy to make. If you’re a nut for nuts then these are the cookie bars for you.

These come together in a snap so they’re perfect to make when you’re short on time. And, you might just have everything already in the cupboard to make these. That’s the beauty of these easy-peasy bars.

Date Nut Bars

For these bars you’ll need a cup of either pecans or walnuts. Use whichever you like the best. I personally like this recipe with either so if you do enjoy both then you pretty much can’t go wrong.

Mix up the batter then add it to a 9″x9″ square pan. This batter is thick so you’ll need to level it with a rubber spatula or the back of a spoon.

Date Nut Bar

After you bake then sprinkle with powdered sugar and cut into squares for a tasty snack that’s sweet without being too sweet. This is what makes a true classic.

Ingredients
  • 1/2 cup granulated sugar
  • 1 cup all-purpose flour
  • pinch salt
  • 2 eggs, beaten
  • 1 1/2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup chopped dates
  • 1 cup chopped walnuts or pecans
  • 1/4 cup powdered sugar for dusting
Preparation
  1. Preheat oven to 350˚F. Combine sugar, flour, and salt in large bowl. Stir in eggs butter, and vanilla. Fold in dates and nuts. Batter will be stiff.
  2. Pour into greased 8”x8” baking dish. Level with back of spoon.
  3. Bake for 20-25 minutes or until toothpick inserted in center comes out clean. Allow to cool for 1 hour before dusting with powdered sugar and slicing into squares.
