Date Night Bites
A one-pan bacon wrapped snack board for your next date night.
This is a sheet tray snack board that you build with brie stuffed dates wrapped in bacon that your caramelize with honey and toasted walnuts. Bring these to the table with your favorite snack board jams, crackers, or fresh cheeses. I don’t want to see another charcuterie without a bacon wrapped date. They are the best appetizer to have come out of the world in recent years. A beautiful pairing of sweet and salty.
Layout all your ingredients on your parchment-lined sheet tray including your halved bacon, pitted dates, and sliced brie. Use your fingers to stuff the cheese inside the date. Brie is a soft cheese so it can be smooshed in. Wrap your bacon around the cheese stuffed date and skewer.
Be sure as you skewer each date to do so on an angle to make removing the cooked dates from the sheet tray. It also makes it easy to flip each over to get that even crispy bacon coverage.
What takes these date night bites up a notch is the honey roasted walnuts. Drizzle the assembled uncooked dates and walnuts with honey. Add fresh thyme and bake for 20 – 25 minutes, flipping halfway for even cooking. As the walnuts cook and absorb the bacon and honey flavor that make for a delicious crunchy and chewy bite. Next time I will add crushed red pepper for a spicy crunch.
Let these dates cool before digging in just make sure to wiggle the dates and walnuts to make sure they don’t stick to the parchment. Combine this with your favorite crackers to make the perfect bite.
Put these on a serving tray and serve them immediately. You can prep these advance, but make sure to cook them before serving. The brie cheese will set up and the bacon will get soggy. I place these on my serving tray with a few crackers and even fresh grapes would make a lovely little date night platter.

Ingredients
- 1 cup pitted dates
- 1 lb. good bacon, halved
- 6 oz. brie cheese, sliced into pieces
- 1/2 cup walnuts
- 3 tablespoons honey
- 3 - 5 fresh thyme sprigs
- 1 cup good crackers
Preparation
- Preheat the oven to 350º F and prepare a parchment paper-lined sheet tray.
- Stuff each date with a piece of brie cheese, wrap each piece around each date, then skewer with a toothpick. Place each piece onto the prepared sheet tray.
- Sprinkle walnuts and fresh thyme sprigs all over the sheet tray, then drizzle with honey.
- Bake dates in the oven for 22 - 25 minutes or until the bacon is lightly golden.
