Mix Until Smooth Before Adding Eggs

Once you add the eggs, don’t overmix the batter. This creates pockets of air bubbles, and the escaping air makes cracks.

Bake the cheesecake slowly at low temperatures. Consider 325 degrees Fahrenheit for 45 minutes.

Don’t Overbake

Your cheesecake is done when it is still slightly mushy and wobbly in the middle. That part, normally about 2 to 3 inches in diameter, firms up as it cools.
