Our Magic Crispy Baked Shrimp is indeed magic and this dish takes its cues from that one, but adds in a sweeter, tangier flavor profile. If you’re already a fan of the former (or even if you’re not), I can promise you that you’ll be a fan of this one too. It’s a quick main dish, clocking in at just about thirty minutes, and it’s made up of succulent shrimp bathed in a sweet and sticky honey-garlic-lime sauce and topped with some Panko breadcrumb crunch. In fewer words — it’s irresistible. And it’s easy to make too.

You start by putting a bit of butter and chicken stock in a baking dish and let it bubble in a hot oven for a few minutes to form a sauce. While that’s happening you toss some shrimp in butter, lime juice, and garlic. (If you use frozen shrimp that are already ready to go, it makes this even easier!) Then, you’ll lay the shrimp down in that buttery sauce and top them with a mixture of Panko breadcrumbs and melted butter. Yes, there’s butter in every step, but that’s just how you know it’s going to be good. Super good.

Bake the shrimp until they’re cooked through but still pink and juicy, which takes just about twelve minutes. That’s just about as simple as dinner gets and just about as delicious too!

For the shrimp:
  • 1 lb jumbo shrimp, peeled and deveined
  • 4 tablespoons (1/2 stick) unsalted butter, melted and divided
  • 1/3 cup chicken stock
  • 4 garlic cloves, minced
  • Juice from 1 lime
  • 3 tablespoons honey
  • A few dashes hot sauce, optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the topping:
  • 3/4 cup panko breadcrumbs
  • 2 tablespoons butter, melted
  • 1/2 teaspoon salt
  • Lime zest, for serving
  • Fresh cilantro, finely chopped, for serving
Preparation
  1. Preheat oven to 425°F.
  2. Pour chicken stock and 2 tablespoons melted butter into a 9x13-inch baking pan. Place in oven for 10 minutes to let sauce reduce.
  3. To a medium bowl, add remaining butter, garlic, lime juice, honey, and salt and pepper to a bowl and whisk to combine. Add shrimp and toss to coat.
  4. In a separate bowl, stir together the topping: the breadcrumbs, salt, and 2 tablespoons melted butter.
  5. Add shrimp to baking dish and spread out in a single layer. Drizzle any extra sauce over the top. Sprinkle with breadcrumb topping and bake until shrimp are opaque but still pink, about 12 minutes.
  6. Broil on high 2 minutes to encourage browning. Top with lime zest and cilantro for serving, if desired. Enjoy!
