First, the shrimp are coated in a seasoned mayonnaise, which helps the coating stick to the shrimp, which gets coated with cheese.

These shrimp have a creamy sauce coating every inch, but it also has a crunchy topping that has a straight-from-the-deep fryer taste without the messy greasiness of frying. The mayonnaise and cheese protect the shrimp from drying out, while the breadcrumbs are baked to golden perfection thanks to the butter and high heat.

This recipe is a great quick way to utilize fresh or frozen shrimp. You can even prepare the shrimp in the mayonnaise and cheese ahead of time, only garnishing them with breadcrumbs right before you pop them in the oven.

While these can be an appetizer all to themselves, these shrimp would be great protein alongside seasoned rice pilaf or roasted potatoes and veggies. You might want to make a double batch of these shrimp; they’re something you won’t want to share!

Ingredients
  • 2 pounds jumbo shrimp, peeled and deveined
  • 2/3 cup mayonnaise
  • 1 teaspoon Old Bay seasoning
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1 cup mozzarella, grated
  • 1/4 cup parmesan cheese, freshly grated
  • 1 tablespoon unsalted butter, melted
  • 1/2 cup panko breadcrumbs
  • Fresh parsley, finely chopped, for serving (optional)
Preparation
  1. Preheat oven to 375°F and grease a 2-qt baking dish with butter or nonstick spray. Set aside.
  2. To a large bowl, add the shrimp, mayo, Old Bay, garlic, and black pepper. Stir to combine.
  3. Add both cheeses and stir once more. Transfer to prepared baking dish.
  4. Stir together breadcrumbs and melted butter, then sprinkle over the shrimp mixture.
  5. Bake until shrimp are just cooked through and top is crispy, 15-20 minutes. (Shrimp are cooked through when they reach 145°F.) Broil 1-2 minutes to brown topping further, if desired. Serve with chopped parsley and enjoy!
