Once again, Tik Tok has introduced us to a fabulous new treat. When I came across a video for this crinkled phyllo dough cake I instantly added it to my saved recipe because it looked not only delicious, but also so simple. If you really want to break it down, it’s more of a custard pastry than a cake, with folded phyllo dough as the base of the dish. It’s popular in Eastern Europe and now gaining popularity globally thanks to Tik Tok. Once you taste it you’ll understand why!

While this treat looks stunning, it’s actually very straightforward to make. Start out by folding (or crinkling) the phyllo dough two sheets at a time. Don’t worry about making all the folds even, we’re going for a mess accordion style fold here. Place the folded dough at one end of a lightly greased baking dish and repeat the crinkle process until the dish is full.

You’ll bake the folded dough for 10 minutes, then drizzle melted butter over the top and bake for an additional 10 minutes. Whisk up the simple custard filling and pour it over the butter dough and then pop it in the oven for about 30 more minutes. A simple syrup is poured over the top of the baked cake and it’s ready to go!

Ingredients
  • 1 (1 lb) box phyllo dough, thawed
  • 1 cup butter, melted
  • 1 cup milk
  • 2 eggs
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract
  • 1 teaspoon cardamom
Syrup
  • 1 cup sugar
  • 1 cup water
  • 1 teaspoon vanilla extract
Preparation
  1. Preheat oven to 350 degrees F and grease a 9x13-inch baking dish.
  2. Pick up two sheets of phyllo dough at a time and crinkle them in accordion folds. Fit folded dough into the prepared baking dish and repeat the process until you’ve worked through both rolls of dough. Fluff folds to ensure they’re evenly spaced.
  3. Bake folded dough for 10 minutes.
  4. Remove dough from oven and drizzle melted butter over the top. Return to oven and bake for 10 more minutes.
  5. As the buttered dough bakes, whisk together the milk eggs, sugar, vanilla, almond extract, and cardamom in a medium sized bowl (a bowl with a pour spout is ideal!).
  6. Remove the baked dough from the oven and pour the custard evenly over the top.
  7. Bake for an additional 30-35 minutes until golden.
  8. During the final bake time prepare the syrup. Add sugar and water to a small saucepan over medium heat. Whisking often, continue simmering until mixture thickens, about 10 minutes. Remove from heat and stir in vanilla.
  9. Drizzle the syrup over the baked cake then let cool before slicing.
