Creamy Peas and Noodles

There are so many ways to enjoy noodles, but one of my favorites ones is very simple and easy to make. Of course I love a good gourmet pasta, but sometimes the cheap classics win against anything high brow. And, that’s the case with this creamy peas and noodles dish.

It’s a one-pan affair that’s ready in no time and without turning the oven on at all! There’s also no béchamel to make as the sauce comes together on its own. But the flavor is really what I love the most about this dish. This is a nostalgic recipe for me since I had this a lot growing up!

Creamy Peas and Noodles

This recipe is so easy, it’s almost like tuna casserole without the tuna- or the baking! To get this dish started you’ll need to lightly brown some egg noodles in butter in a large skillet. This adds color and flavor to the noodles and means they don’t get too soggy when you add the liquid ingredients.

Make sure your skillet is very large so it all fits. If you don’t have a skillet large enough just use a stockpot instead.

Creamy Peas and Noodles

The beauty of this recipe is that it all cooks together. The final touch is to add some cheese, turn off the heat, and cover to let the cheese melt fully. After that you’re ready to dig into this cheesy, creamy noodle dish.

Since peas have a lot more protein than other veggies you can have this as your main dish if you like. Or serve as a side for burgers, chicken, or your protein of choice.

Ingredients
  • 1/4 cup butter, cubed
  • 2 tablespoons vegetable oil
  • 5 cups uncooked egg noodles (from a 12 oz package)
  • 1 (10 oz) package frozen peas
  • 2 1/2 cups vegetable broth
  • 1 cup half-and-half cream
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried onion
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheddar cheese
Preparation
  1. Add butter and oil to large skillet. Heat over medium and add noodles. Cook for 2-3 minutes or until lightly browned.
  2. Add peas, broth, cream, onion powder, salt, and pepper. Cover and simmer for 12 minutes or until noodles are cooked through.
  3. Remove from heat and top with cheese. Cover and allow to sit for 3 minutes for cheese to melt.
