We’re always on the hunt for new easy dinner recipes and let me tell you, this Creamy Lemon Pasta Bake is a real keeper! It takes mere minutes to prepare and the ingredients are mixed together right in the baking dish (fewer dishes for the win!). The zesty lemon flavor is rounded out with a splash of heavy cream and a healthy sprinkle of parmesan cheese. My partner and I thought it tasted like an adult mac & cheese, a dish we can definitely get behind.
You’ll start out by preheating the oven to 350 degrees and lightly greasing a 9×13 baking dish. The uncooked pasta is added right to the dish, along with vegetable or chicken broth, the juice and zest of one lemon, minced garlic, and a few seasonings. Feel free to sprinkle in a little crushed red pepper to kick the spice up a notch. Mix everything together, cover the dish with foil, and bake for about 45 minutes or until the pasta is fully cooked.
After the pasta has baked, the final ingredients are mixed in. Heavy cream, parmesan cheese, and parsley round out the sauce. Then dinner is ready to serve! Pair it with your favorite salad or roasted veggies and a protein for a well rounded meal. When you’re in need of a fast and easy weeknight meal, give this Creamy Lemon Pasta bake a try. You’re sure to fall in love!
