
What is it about a casserole that makes everyone feel so cozy and comfortable? This creamy corn casserole is one of those recipes, and it’s almost too simple to be this good. Corn is the main ingredient in three different forms. Some casseroles are holiday-specific, and while this gives Thanksgiving vibes, it’s one of my favorite go-to weeknight side dishes. Basically, a Creamy Corn Casserole is good all day, every day.


Corn is used three ways in one: creamed corn, whole corn (canned), and corn bread. The corn is combined with butter, eggs, sour cream, sugar, salt, and pepper.


All of the ingredients are mixed together and poured into the baking dish. My secret: I melt the butter directly in the baking dish, and the corn mixture is poured directly over the melted butter. This will help the edges get nice and crispy. And that’s it! Couldn’t be simpler. The casserole bakes at 350℉ for 40-50 minutes and comes out golden and delicious. Get ready to fight over the corner pieces!

Creamy Corn Casserole

Ingredients
- 1/2 cup (1 stick) unsalted butter
- 1 cup sour cream
- 1 (15 oz) can cream style corn, undrained
- 1 (15 oz) can corn, drained
- 2 eggs, beaten
- 1 (8 oz) package cornbread mix
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Granulated sugar
Preparation
- Preheat oven to 350°F and add butter to a 2 quart baking dish. Place in oven until the butter has melted, then swirl to coat the sides. Remove from oven and set aside. (9x9 or 8x8)
- In a medium bowl, mix together the sour cream, creamed corn, corn, eggs, and butter. Add cornbread mix and salt and pepper and stir to combine. Pour into to hot baking dish, then sprinkle lightly with sugar.
- Bake until golden brown and a toothpick inserted into the center comes out clean, 45-50 minutes.
