When you’re living a low carb lifestyle, one of the hardest things to go without is pancakes. But never fear, this genius method gives you a high protein, low carb option that only uses two ingredients. Yes, two! And they’re still incredibly delicious!

Those two ingredients are eggs and cream cheese, and the secret is in how they’re brought together. Processing them in a blender aerates the eggs, ensures the mixture is totally smooth, and gives you a soft and fluffy pancake texture even though there’s no flour involved.

You can add a bit of vanilla or salt to the mix, but eggs and cream cheese are the only two ingredients that are an absolute necessity. The batter will be thin but you still know it’s time to flip when bubbles form on the surface, just like you would with a traditional pancake.

  • 4 eggs
Preparation
  1. Add eggs and cream cheese to the jar of a blender. You can add a little salt or vanilla if you wish. Blend until completely smooth. Let batter rest while you heat a skillet over medium heat..
  2. Once pan or griddle is hot, pour out two tablespoons of batter. Batter will spread quite a bit.
  3. Cook until just golden on one side, about 2 minutes, then carefully flip and cook for 1-2 minutes more.
  4. Serve with your favorite toppings and enjoy!
