For a lot of us meatloaf is the quintessential dinnertime comfort food. It conjures up nostalgic childhood memories and good feelings.
It started as a way to make the most of one’s weekly budget. You add a few ingredients to meat (and usually some cheaper fillers) and suddenly you’ve made a little bit of ground beef into many more servings. And, all those additions also add to the wonderful flavor, too.
Hearty, dependable, economical, and so delicious- what more could you ask for?
In this country style meatloaf instead of breadcrumbs we are using Italian bread. And a host of vegetables really liven up the flavor, too. The veggies are what makes this country style after all.
Some green pepper, diced very finely, gives this meatloaf the oomph it needs. A little fresh parsley in there takes it up a notch, too.
Then there’s the glaze made from a few simple ingredients. Despite being so easy to make this glaze brings a sweet-savory-tangy element to the meatloaf. The glaze gets baked into the top of the meatloaf and also becomes more concentrated as it cooks.
This recipe makes two very ample loaves, which means it really feeds a crowd- with a little to spare for leftovers, too. If you’re looking for a more modest amount of meatloaf consider halving the recipe.

Country Style Meatloaf

For the meatloaf:
- 3/4 loaf Italian bread (8 oz)
- 1 green bell pepper, diced
- 1 peeled yellow onion, finely diced
- 8 oz mushrooms, minced
- 4 cloves garlic, pressed
- 3 1/2 lbs ground beef
- 2 eggs
- 2 tablespoons Worcestershire sauce
- 1/2 teaspoon thyme leaves
- salt and pepper to taste
For the Glaze:
- 3/4 cup ketchup
- 1/3 cup packed light brown sugar
- 2 tablespoons soy sauce
Preparation
- Preheat oven to 375˚F. Tear bread into pieces and soak with water in large bowl or pan for 5 minutes. Wring out water from bread thoroughly.
- Combine bread with pepper, onion, mushrooms, garlic, beef, eggs, Worcestershire, salt, and pepper.
- Form into 2 loaves and place in loaf pan to bake. Combine glaze ingredients well and spread over top of loaves. Bake for 50-60 minutes or until internal temperature reaches 165˚F.
- Allow to rest 5 minutes before slicing and serving.
