Ingredients
  • 10 large eggs, beaten
  • 2 (16 oz) tubs cottage cheese
  • 2 cups shredded pepper jack cheese, divided
  • 1 (4 ounce) can diced green chiles
  • 1/3 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and pepper, to taste
Preparation
  1. Preheat oven to 400 degrees F and grease a 9x13-inch pan, then set aside.
  2. In a large bowl, beat eggs, then mix in cottage cheese, 1 cup shredded cheese, chiles, flour, baking powder, garlic powder, paprika, salt, and pepper.
  3. Transfer mixture to the prepared pan and sprinkle remaining shredded cheese on top.
  4. Bake for 15 minutes, then reduce heat to 350 degrees and continue baking for 25-30 more minutes until middle is set.
