Ingredients
- 10 large eggs, beaten
- 2 (16 oz) tubs cottage cheese
- 2 cups shredded pepper jack cheese, divided
- 1 (4 ounce) can diced green chiles
- 1/3 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Salt and pepper, to taste
Preparation
- Preheat oven to 400 degrees F and grease a 9x13-inch pan, then set aside.
- In a large bowl, beat eggs, then mix in cottage cheese, 1 cup shredded cheese, chiles, flour, baking powder, garlic powder, paprika, salt, and pepper.
- Transfer mixture to the prepared pan and sprinkle remaining shredded cheese on top.
- Bake for 15 minutes, then reduce heat to 350 degrees and continue baking for 25-30 more minutes until middle is set.
