Looking for light, refreshing, and delicate? Then this isn’t the post for you. However, if you’re looking for a therapeutic level of indulgence, the Cookie Croissant is your prescription. Simple grocery store staples are mashed together, and baked until warm gooey perfection.

When you think of viral recipes, you may think of gross Frankenfoods, but the croissant cookie is, in fact, not a spawn of the TikTok algorithm. These croissants were the brainchild of Stéphane Louvard, a co-owner of the bistro Maison Louvard on Rue de Châteaudun in Paris. Their croissants are made in-house and take three days to make. Once slightly stale, the croissants are partially sliced, filled with sixty grams of cookie dough, topped with forty grams, and baked until the cookie dough is barely set. The cookie croissant has been on their menu since 2022, however, it wasn’t until 2024 when someone posted a video of their bread-dessert hybrid to TikTok, and since then, the interest in the treat hasn’t died down.

Since we don’t have plane tickets to head on over to Paris and try the bistro’s version, a DIY version is equally delicious. Sure, we may not be laminating our dough croissant dough or using specialty chocolate, but this version hits all of the rich, satisfying notes of the real thing.

The best thing about this recipe is that you can be as fancy or as simple as you want. You can buy bakery-made croissants as the base, but simple grocery-store croissants work perfectly as well. You can make your own cookie dough, but pre-made cookie dough is also A-okay.

This recipe is a great way to revive stale croissants, as the cookie dough and baking time inject life into the brittle interior. But seriously, anything croissant at any stage of its life is fine. Fresh croissants might be a little soft and might be hard to hold by hand.

Once you get the oven preheating, start prepping your croissants by slicing three-quarters through the center. You want the top of the croissant still attached to the bottom.

While the original version weights out the cookie dough portion, you don’t have to pull out the kitchen scale. Spoon three large tablespoons of cookie dough, and place them in the croissant. Since the cookie dough will spread, make sure the cookie dough isn’t sticking out of the croissant.

Once stuffed, press the croissants down, this will stick the top portion of the croissant to the cookie dough.

Top each croissant with two heaping tablespoons of cookie dough. For extra delight, stick a few chocolate chips or bits of chocolate bar into the cookie dough topping. This will add to the richness of the cookie croissant and will give the eater a clear message — this croissant is packed with indulgence.

These Cookie Croissants don’t need to bake long. A mere eight to twelve minutes in the oven will cook the dough and warm the croissants to peak dessert perfection.

While these taste good for several days after baking, fresh from the oven is, honestly, their destined form of consumption.

Textures are what makes this dessert so phenomenal. The flakey pull apart strands of the croissant are contrasted by dense, chewy cookie dough. Inside the cookie dough is soft, goey, and molten, but the cookie dough on top is fudgy and chewy.

While there isn’t a dessert anyone really asked for, the Cookie Croissant is the dessert everyone needs. It has the comfort of a classic American chocolate chip cookie embraced by the feathery light, but rich encasing of a French croissant. The fusion-rich comfort of a treat like this is meant to quell the experienced days past and the unknown of the days to come.

Ingredients
  • 4 to 6 croissants
  • 1/2 package chocolate chip cookie dough
  • 1/4 cup chocolate chips or chunks (for garnish)
Preparation
  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Slice croissants in half and set onto the prepared baking sheet.
  3. Place 2 to 3 pieces of cookie dough inside each croissant.
  4. Close the croissant, topping with small spoonfuls of cookie dough and sprinkling of chocolate chips.
  5. Transfer prepared croissants to a baking sheet and bake for 8 to 12 minutes. Serve warm.
