
Looking for something a little different for dinner? I’ve got just the thing! These chicken mozzarella sloppy joes have marinara, a blend of seasonings, and surprisingly, shredded zucchini! It may sound strange, but it totally works in this recipe! Go ahead and see how easy it is to throw together in the video below.

To get started on this easy and tasty meal, add oil and diced onion to a large skillet and heat on medium-high until onion starts to soften, about 5 minutes. Next, add ground chicken and cook until browned.
While the chicken is cooking, go ahead and make the breadcrumbs by placing butter in a separate skillet over medium heat. Add breadcrumbs and salt and pepper to taste, Cook 2-3 minutes, until breadcrumbs are browned. Once the chicken is cooked, add shredded zucchini, Italian seasoning, and garlic powder to the same pan. Cook an additional 3-4 minutes to soften the zucchini.

Pour in marinara sauce and cook for another 5 minutes before adding the cheese on top. Cover and turn heat to low, allowing the cheese to melt. If you’re using an oven-proof skillet, you can broil the cheese. Serve on top of toasted Brioche buns, topped with golden buttered breadcrumbs!
I absolutely love this meal, and so does my family. You can serve these sandwiches with chips for lunch, or a few heartier sides for dinner. The chicken keeps great in the fridge so you can always heat up leftovers!

Ingredients
- 1 tablespoon olive oil
- 1/2 white onion, diced
- 1 lb ground chicken
- 1 cup shredded zucchini (about 1 small zucchini)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1 1/2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoon unsalted butter
- 1/2 cup breadcrumbs
- 4 Brioche buns
- Optional: garnish with fresh chopped parsley
