Cheesy Spud Crackles
A crackle is an all cheese cracker and these spud crackles combine the perfect balance between crispy and creamy.

These crackles are my new favorite thing that I will experimenting from now on with every vegetable I can find. Spud crackles has to be my favorite combination so far. These creamy and crispy snack bites go perfect for a game day snack, a potato party at home, or a new exciting way to introduce your friends/family to this addictive treat. Be sure to bust out the good ranch for this recipe. They remind of the best version of a cheese curd.

This essentially a three-ingredient recipe, so be sure to pickup some good cheese. The most important of the ingredients. Parmesan needs to be finely grated, not pre-shredded or finely zested. The big grains of parmesan will melt evenly as the cheddar. Make this easy on yourselves and find the pre-cut cheddar “cracker-cut” slices for easy assembly.

You can toss these potatoes in whatever seasoning you’d like. The most appealing to me is ranch seasoning, but who’s stopping you from doing a cajun or BBQ rub. The way the cheese melts under these potatoes adds for the best crunch and flavor you can afford to experiment. Be sure to use small potatoes here, as large ones will prevent these from cooking longer.

The parmesan cheese is simply added as binder and flavor. If you’d like to sub in Pecorino or fontina cheese here I encourage you.

My favorite thing about this recipe is how these cook up! The cheese melts together until a cheese brick is formed. I almost want to save it in this form and let people play rock, paper, scissors to see who gets the opportunity to smash the brick. Using the pre-cut cheese helps these crackles crack evenly to get the perfect potato to cheese ratio, so let your friends crack the crackle.

This amazing snack is done in less than an hour and prepared in less than 15 minutes. Pre-cook your potatoes the night before for easy assembly day of. In five years I think the word crackle will be all over everyone’s charcuterie boards, appetizer spreads, and potlucks. What else can you crackle?

Cheesy Spud Crackles

Ingredients
- 1.5 lb. baby potatoes, halved
- 2/3 cup parmesan, finely grated
- 20 cracker-cut cheddar cheese slices, white and yellow
- 2 tablespoons ranch seasoning powder
- Good ranch, for dipping
Preparation
- Preheat a 325° F oven and prepare a sheet tray with a silicone-lined baking sheet.
- Par-boil the baby potatoes in salted boiling water until easily pierced with a knife. Drain and let cool slightly.
- In a bowl, toss cooked potatoes with ranch seasoning and two tablespoons grated parmesan.
- Line the prepared sheet tray with all 20 cheese slices alternating between each, then top with ranch coated potato cut-side down. Sprinkle remaining parmesan all around potatoes.
- Bake in the oven until crispy, 42 - 45 minutes. Enjoy with ranch dipping sauce.
