Today, I have a recipe that combines two of my all-time favorites: dill pickles and cheesy bread. Yes, you heard that right – pickle lovers rejoice! I understand that this controversial recipe may not be for everyone, but that just means there’s more for the true pickle fans. The cheesy goodness is nearly impossible to resist. Don’t be surprised if it disappears in the blink of an eye!

Our easy appetizer is made with buttery puff pastry, a creamy ranch base, plenty of cheese, and loads of tangy dill pickles. Make sure you thaw the puff pastry ahead of time according to the directions on the packaging so it’s ready to use. Whip up the base made with sour cream, cream cheese, parmesan, ranch seasoning, and dried dill. This is spread onto the dough, leaving the border clean for easy handling. Sprinkle on shredded mozzarella cheese then load up on the pickles!

Pop it in the oven for about 25 minutes or until it’s puffed and golden brown. Garnish with fresh dill, a sprinkle of red pepper flakes for a kick, and a dusting of additional parmesan cheese to really elevate the flavor. Slice it up and serve it as an appetizer, snack, or even a side dish with soup or salad. However you serve it, I guarantee this Pickle Bread will become a new favorite in your house!

Ingredients
  • 1 large sheet puff pastry, thawed
  • ¼ cup cup sour cream
  • 4 oz cream cheese
  • 2 tablespoons grated parmesan cheese
  • 1 (1 oz) packet ranch seasoning
  • ½ teaspoon dried dill
  • 1 ½ cups shredded mozzarella
  • 1 cup dill pickles chips
  • 1 egg
  • Garnish: fresh dill, red pepper flakes, additional parmesan
Preparation
  1. Preheat the oven to 425 degrees F and line a metal baking sheet with parchment paper.
  2. Line a plate with paper towel and place pickles on top in an even layer. Pat excess juice off the top.
  3. Place the sheet of puff pastry on the prepared baking sheet and score a 1 inch border around the edge with a sharp knife, then poke center with a fork all over to prevent bubbles.
  4. In a small bowl, mix together sour cream, cream cheese, parmesan, ranch seasoning, and dill.
  5. Spread mixture over the puff pastry within the border.
  6. Sprinkle mozzarella on top then arrange pickles in an even layer.
  7. Whisk egg in a small bowl and brush onto the border.
  8. Bake bread for 23-26 minutes or until golden.
  9. Garnish with dill, red pepper flakes, and parmesan
