Sweet, salty, and crunchy– these are the qualities of my ideal snack. That might be why this Cashew Crunch recipe caught my eye immediately. Made with Chex, sweet coconut flakes, and nutty cashews, the resulting flavor completely knocks it out of the park. Let me tell you, it’s super simple to make and even easier to shovel in your mouth. You’ve been warned!

Start things out by mixing together the cereal, coconut flakes, and cashews in a big bowl. You’ll then prepare a sweet and caramel-y sauce on the stove top made with butter, sugar, corn syrup, and a few seasonings. Once the sauce is fully incorporated, pour it over the cereal mixture and give everything a good stir. The final step is transferring the mix to a baking sheet and letting it get good and crispy in the oven.

Ingredients
  • 1 (12 oz) box Chex
  • 8 oz cashews, roughly chopped
  • 2 ½ cups sweetened coconut flakes
  • ½ cup butter (1 stick)
  • ½ cup brown sugar
  • 1/2 cup corn syrup
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
Preparation
  1. Preheat oven to 250 degrees F and line a cookie sheet with parchment paper.
  2. Pour the cereal, coconut, and cashews into a large mixing bowl, then set aside.
  3. Add butter, brown sugar, and corn syrup to a small saucepan over medium heat and bring to a boil. Cook for 1 minute, stirring often. Remove from heat and stir vanilla, salt, and cinnamon.
  4. Pour butter mixture over cereal mixture and mix until fully coated.
  5. Transfer to the prepared baking sheet and bake for 45-50 minutes, flipping mixture every 15 minutes or so.
  6. Allow treat to cool before breaking into bite-sized pieces.
