Chicken salad is one of the most versatile things out there. You can pile it on top of a green salad, you can pile it on top of a sandwich or roll it up in a wrap, OR you can even just go ahead and use it as a protein-packed dip. This one, filled with tangy buffalo-sauce flavor, works in all of those applications exceptionally well. Call it an appetizer or use it as meal prep, you’re going to love this Buffalo Chicken Salad!

What Ingredients Do You Need for Buffalo Chicken Salad?

You’ll need:

  • Cooked chicken. You can shred or chop it. (Leftover rotisserie works great.)
  • Buffalo wing sauce.
  • Mayo. Or Greek yogurt, up to you!
  • Ranch seasoning.
  • Red onion and green onion.
  • Celery.
  • Some crumbled blue cheese.

How do you Make Buffalo Chicken Salad?

Can you chop some stuff and stir some stuff together? Great, then you can make this!

The only things to chop are the celery, green onion, and red onion. I like to keep them pretty small so they become a cohesive part of the salad. (No one wants a giant bite of raw onion, right?)

The only other prep is to shred or chop the chicken. I like it shredded in this salad, it works better with the creamy dressing, I find. You’ll need three cups of chicken here, which is an about what you can pull off of a whole small chicken.

Take that chicken, take those veggies, and stir them together with some buffalo wing sauce, mayo or yogurt, some ranch seasoning, and just a bit of blue cheese. This is definitely a place where you want to adjust things to taste. If you like it a little spicier, add more buffalo sauce. If you want it on the milder and creamier side, opt for more mayo. And if you’re not big on blue cheese, you can use a milder option like gorgonzola. (Though at a mere two tablespoons, the blue cheese here really fades into the background.)

This is a delicious chicken salad that keeps really well when made ahead. It’s creamy, tangy, and has just a little kick! People tend to love this at parties and potlucks because it’s great scooped up with celery or crackers (though it makes great little sliders too). Enjoy!

Ingredients
  • 3 cups cooked chicken, chopped or shredded
  • 1/3 cup buffalo wing sauce
  • 1/2 cup mayonnaise or plain greek yogurt
  • 1 tablespoon ranch seasoning
  • 1/2 small red onion, diced
  • 2 celery stalks, diced
  • 1/4 cup green onion, diced
  • 2 tablespoons crumbled blue cheese
  • Kosher salt and freshly ground black pepper, to taste
Preparation
  1. In a bowl, combine the chicken, wing sauce, mayo or yogurt, ranch seasoning, red onion, celery, green onion, and blue cheese.
  2. Stir to combine, then taste and season with salt and pepper and add more wing sauce if desired.
  3. Chill until ready to serve. Serve topped with more green onion or blue cheese if desired. Enjoy!
