Let’s get into a few specifics… Since it’s an upside down tart we’re starting with the top layer on the bottom and finishing with a square of puff pastry on top. Make sure to line your baking sheet with parchment and give a quick once over with cooking spray to ensure easy removable. Layer in the honey, brown sugar, cinnamon, and cardamom for a warm and sweet flavor, then arrange the apple slices so they’re slightly overlapping. Gently press on the puff pastry and brush the sheet with beaten egg.

Ingredients
  • 2-3 tart apples
  • 1/3 cup honey
  • 1/4 cup brown sugar
  • 3 tablespoons butter, sliced into 6 pats
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cardamom, optional
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten
Preparation
  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper, then lightly grease the paper.
  2. Core apples and cut into thin slices.
  3. Unroll puff pastry and slice into 6 rectangles.
  4. For assembly, drizzle honey in 6 zag zag rectangles about the size of your pastry rectangles. Sprinkle the brown sugar, cinnamon, and cardamom on top of the honey, then place a pat of butter on the center of each segment.
  5. Layer apple slices across each rectangle.
  6. Place a puff pastry rectangle on top and very gently press down to form to the apple slices.
  7. Brush the top of each pastry with the beaten egg.
  8. Bake for 18-22 minutes or until golden brown.
