In my humble opinion, bread pudding does not get the attention it deserves. Everytime I’m lucky enough to indulge in a slice, I find myself wondering why this isn’t a staple in my dessert repertoire. I’ve made some incredible variations over the years, but this Apple Pie Bread Pudding just might be my favorite. It’s loaded with juicy apples and topped off with a homemade caramel sauce for the ultimate fall treat. Yum!

Many people assume that bread pudding is difficult to make and that is absolutely not true. You’ll want to use stale bread for the best results so leave the bread slices out overnight if you’re working with a fresh loaf. Cut each slice into small cubes and then gently mix them into a mixture of eggs, milk, heavy cream, sugar, and spices. Fold in the apples, then transfer the mixture to a large baking dish.

Bake the pudding for about 35 minutes or until the top is nice and crispy. Drizzle the caramel sauce over the top and this dish is ready to go. Ingredients
  • 1 large loaf french bread, stale is best
  • 2 large apples, peeled and diced
  • 4 eggs
  • 1 cup milk
  • 1 ½ cups heavy cream
  • ¾ cup sugar
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cardamom, optional
Sugar Topping
  • ½ cup sugar
  • 1 teaspoon cinnamon
Caramel Sauce
  • 1 cup butter (2 sticks)
  • 3/4 cup heavy cream
  • 3/4 cup brown sugar
Preparation
  1. Preheat oven to 350 degrees F and lightly grease a 9x13-inch baking dish.
  2. Cut bread into 1 inch cubes and set aside.
  3. Add milk, heavy cream, eggs, sugar, cinnamon, nutmeg, and cardamom to a large bowl and whisk to combine.
  4. Gently mix in cubed bread and apples, then transfer mixture to the prepared baking dish.
  5. Mix together ½ cup sugar and 1 teaspoon cinnamon in a small bowl and sprinkle over top the dish.
  6. Bake for 30-35 minutes or until top is crisp and golden in color.
  7. While pudding bakes, prepare the caramel sauce: add butter, heavy cream, and brown sugar to a small saucepan and bring mixture to a boil. Stirring often, continue cooking over low heat until sauce thickens, about 4-5 minutes.
  8. Drizzle caramel sauce over baked pudding and serve warm.
