If there’s a better combo than apples and cinnamon I’d like to hear it! The fruit flavor of apple takes on the spicy taste of cinnamon, nutmeg, and allspice. In these apple drop cookies you get a soft, fruity, tender cookie flavored with warming fall spices. You can make these any time of year for a treat that is pure, old fashioned goodness.

To start this recipe off you’ll need to make the dough and this one’s a doozy. It’s a rich blend of butter, brown sugar, and vanilla that forms the ideal foundation for the headier flavors of apples and aromatic spices.

It’s easiest to buy a jar of pre-mixed spices for this recipe. Using an apple pie spice blend is preferred, but if you can only find a pumpkin spice blend it will work great for this recipe, too. As long your blend contains key spices like ginger, nutmeg, and/or allspice then you’re good to go.

You need to chop the apples into small pieces so that the cookies bake evenly and don’t fall apart when they’re done. Fold the apple pieces into the dough along with some walnuts or pecans.

Once these bake up they will spread out and that’s normal. It’s important to let them cool for a bit on the pan before moving them to a wire rack to cool completely.

For an extra hit of sweetness and spice you can glaze these cookies and then sprinkle with a bit of nutmeg. This is an optional step and the natural sweetness of apples makes these cookies plenty sweet on their own, too.

For the cookies:
  • 1/2 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon apple pie spice (or pumpkin pie spice)
  • 1 egg
  • 2 tablespoons apple juice or apple cider
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1 cup peeled apple, finely chopped
  • 1 cup chopped walnuts or pecans
For the glaze (optional):
  • 1 cup powdered sugar
  • 3 tablespoons apple cider or juice
  • ground nutmeg for dusting
Preparation
  1. Preheat oven to 375˚F. In large bowl cream together butter and sugar. Add in vanilla, cinnamon, apple pie spice, egg, and apple juice.
  2. Sift in flour and baking soda, mixing well. Fold in apple and nuts.
  3. Drop by teaspoonfuls onto lined baking sheets spaced 2” apart. Bake for 10-12 minutes or until just beginning to brown on the edges. Allow to cool on pan for 5 minutes before transferring to wire rack to cool completely.
For the glaze (optional):
  1. Allow cookies to cool for 1 hour before glazing. Combine powdered sugar with apple juice until smooth. Drizzle over cookies then dust with nutmeg.
