We were first introduced to the viral Crinkle Cake earlier this year and it was love at first bite. This Greek inspired dish became popular on TikTok and recipe creators have been putting their unique spins on it ever since. I’d only tried sweet versions so far and thought it was high time I give a more savory take a try. This Apple & Brie Crinkle is where I landed, and oh boy, was it delicious!

This version sticks pretty close to the original recipe. You start out by folding (or crinkling) the phyllo dough like an accordian to fill the bottom of the baking dish. The folded dough is baked for 10 minutes, then lightly drizzled with butter and returned to the oven for another 10 minutes. As it bakes, mix up a simple cream filling and make sure your apples and brie are sliced.

Slide the apples and cheese into the folds of the baked dough and pour the filling over top. The dish bakes for another 30 minutes or so until it’s golden brown. Garnish the final product with a generous drizzle of honey and some crunchy walnuts for a finishing touch. Whether you’re entertaining guests or simply treating yourself, this Apple & Brie Crinkle is sure to impress everyone who takes a bite!

Ingredients
  • 1 (1 lb) box phyllo dough, thawed
  • 1 cup butter, melted
  • 6 oz brie cheese, thinly sliced
  • 1-2 apples, thinly sliced
  • 1 cup milk
  • 2 eggs
  • 2 tablespoons sugar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoons salt
  • ⅓ cup honey
  • ¼ cup walnuts, chopped
Preparation
  1. Preheat oven to 350 degrees F and grease a 9x13-inch baking dish.
  2. Pick up two sheets of phyllo dough at a time and crinkle them in accordion folds. Fit folded dough into the prepared baking dish and repeat the process until you’ve worked through both rolls of dough. Fluff folds to ensure they’re evenly spaced.
  3. Bake folded dough for 10 minutes.
  4. Remove dough from oven and drizzle melted butter over the top. Return to oven and bake for 10 more minutes.
  5. As the buttered dough bakes, whisk together the milk, eggs, sugar, garlic, thyme, and salt in a medium sized bowl (a bowl with a pour spout is ideal!).
  6. Remove the baked dough from the oven and generously insert apple and brie slices into the folds of the dish.
  7. Pour the milk mixture evenly over the top.
  8. Bake for an additional 30-35 minutes until golden.
  9. Drizzle with honey and garnish with chopped walnuts. Let cool before slicing and serving.
