Most of us tend to acquire salad dressings from grocery store shelves, but the truth is that dressings (especially vinaigrette) are incredibly easy to make on your own and the flavor of homemade is leaps and bounds above anything you can buy in a bottle. In the video below, Chef Dom shows you how to make a delicious basic vinaigrette and two ways to build upon it with other flavors. It only takes a few minutes and a few ingredients and once you try it, you’ll never go back to storebought.

To the uninitiated, vinaigrette might seem difficult, but it really is very simple to make even for those without a ton of cooking experience. Vinaigrette is an oil and vinegar-based dressing and it relies on an emulsifier, in this case, Dijon mustard, to help bring things together. For this basic vinaigrette, you need just Dijon mustard, white wine vinegar, shallots, honey, garlic, and olive oil. You want to mix together everything but the olive oil first and then slowly stream in the oil while constantly whisking. Eventually your mixture will come together – or emulsify – and as Chef Dom explains, both the honey and Dijon help that process along.

Chef Dom also shows you how to take that basic vinaigrette and flavor it two different ways — in a sweeter poppy seed variation that’s perfect for salads that feature fruit, and also an herb-flavored option that’s great with Italian food. Homemade salad dressing is such a simple way to bring a lot more flavor into your everyday cooking and it takes mere minutes to make any salad taste special.

For basic vinaigrette:
  • Olive Oil
  • White Wine Vinegar
  • Shallots, chopped
  • Garlic, minced
  • Dijon mustard
  • Honey
  • Kosher salt and freshly ground black pepper, to taste
For poppy seed vinaigrette:
  • Poppy seeds
  • Additional honey
For herb vinaigrette:
  • Fresh basil, chiffonaded
  • Oregano, fresh or dried
Preparation
  1. In a medium bowl, whisk together all dressing ingredients except for olive oil. Whisk until combined.
  2. Then, slowly stream in the olive oil while whisking constantly. Once ingredients have come together (emulsified), the vinaigrette is done.
  3. Note: You can also combine your ingredients in a blender and emulsify that way. If using this method, stir in herbs after dressing is made.
