If you’re like me, by St. Patrick’s Day there is no upper threshold to the amount of corned beef one can consume. Soft, tender, and seasoned just right, corned beef is such a perfect dish. Once I spot it all over the grocery store, I’m cooking up corned beef practically every week. Yet sometimes the traditional corned beef and cabbage dish is, well, a little boring. With so many leftovers, I’m always on the hunt for recipes and there are so many interesting ways to utilize this classic St Patrick’s Day meat. If you have the same dilemma look no further! The four recipes below are delicious ways to use up that remaining corned beef.
