
I’m always on the lookout for quick and easy weeknight meals, especially around this time of year when the whole family seems to have activities planned every night. With everyone’s busy schedules, having a few 30-minute meals the whole family loves is essential! That’s where this 30-Minute Sloppy Joe Casserole comes into play.
Not only is this a hearty recipe that will fill everyone up, but it all comes together in one pan over the stovetop. That means the clean-up is just as easy as the prep work! A true win-win in my book.

To get started on this quick and easy dinner, place ground beef, onion, and green pepper in a large pan. Cook until the beef is browned and veggies are tender, around 5-7 minutes. Next, pour in the sloppy joe sauce, followed by garlic, parsley, salt, and pepper. Heat until simmering, about 2-3 minutes.
Then, add the cooked pasta to the pan, stirring to coat. Mix in 1 1/2 cups of cheese until melted. Top with remaining cheese, cover, and cook for a few minutes until the top cheese is melted. Garnish with fresh parsley or basil and serve up hot!

Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 1 green pepper, diced
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- 2 15 oz cans sloppy joe sauce
- 1 16 oz pkg rotini, cooked
- 2 cups cheddar cheese divided
- Salt & pepper to taste
- Optional toppings: Fresh parsley or basil
