Chicken — the quintessential workhorse of dinner. It doesn’t matter what country you go to, chicken is a staple in everyone’s cooking toolbox. So when I came across a traditional Mexican-style chicken stew that was complex with flavor and easy to make, I knew it was something special.

Though this woman has only had a YouTube channel since 2019, she’s racked up over four million subscribers, and after you watch her videos, you’ll understand why. In a traditional old-school kitchen, she whips up classic Mexican family-style cuisine that makes you feel like you’re getting a warm hug from a grandmother. When people think of Mexican food, they only think of two extremes — the easy Tex-Mex fusions and the ridiculously complicated slow-roasted stews and time-consuming sauces. But this channel, De Mi Rachero A Tu Cocina (from my ranch to your kitchen), breaks these preconceived notions. The approachable and down-to-earth chef shows recipes that are feasible and quick to make for any home cook.

Over a traditional wood-fired stove, she sears the chicken in a pan. In another pot, she starts making the mole base with tomatoes, onion, garlic, crushed peppers, and crushed dried chilies. If you don’t have these sorts of chilies at your store, you can simply use red chili flakes, but you may not get the same deep flavor.

After she sears the chicken, she preps the vegetables. A mix of green beans, jalapeño peppers, potatoes, and carrots gives the stew a healthy amount of veggies that add a satisfying amount of bulk. Cooking the vegetables in the pan where you cooked the chicken allows you to build on top of the seared chicken flavor.

Once the tomatoes are softened, she finishes the mole by blending the ingredients in a blender. She combines the mole and the cooked chicken into the pot where the vegetables were sautéing and simmers everything until it becomes heated and aromatic.

Now she serves the stew with fresh handmade tortillas but you can use a shortcut or two and buy yourself some premade ones at the store.
