It’s no secret that we are BIG dessert fans around here. The post-dinner sweet cravings hit just about every night and nothing satisfies quite like a baked good. Cookies, cakes, brownies, bars… I don’t discriminate. And when I’m in need of a treat, but not feeling a full on night of baking, this is one of the recipes I whip out! These Snickerdoodle Bars are pretty much a one-bowl recipe. All it takes is just mixing everything together then topping with that famous cinnamon sugar mixture that has us all hooked.

Start to finish they’ll take you less than 40 minutes. Though, that might feel like ages when your house is filled with the heavenly sweetness of baking cinnamon goodness.

The original snickerdoodle cookie will always have a special place in my heart, but the simplicity of bars have really been appealing to me lately. Instead of spooning out each individual cookie dough ball and rolling it in the cinnamon sugar mixture, I can just press all of the dough into the pan, sprinkle on the topping, and call it a day.

And as someone who prefers a super soft cookie, I’m all about the chewy center slices. Thankfully I have family members who are team crunchy who are happy to take those edge slices off my hands. No matter what team you’re on, you can’t go wrong with the super buttery and sweet flavor these bars deliver!

The amount of sugar in the topping may seem excessive at first, but don’t worry, the dough will absorb a lot of it and leave you with the perfect golden sugary layer. Next time you’re in need of a sweet treat in a hurry, give this recipe a try. I think your family will love them as much as mine did!

Dough
  • ¾ cup butter, fully melted
  • ¾ brown sugar
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon cream of tartar
  • ½ teaspoon salt
Topping
  • ¼ cup sugar
  • 2 teaspoons cinnamon
Preparation
  1. Preheat oven to 350 degrees and thoroughly grease a 9x13 pan.
  2. Mix the melted butter and sugars together in a large bowl until smooth. While continuing to mix, add the eggs and vanilla.
  3. Add the flour, baking powder, cream of tartar, and salt to the bowl of wet ingredients and stir until combined.
  4. Transfer batter to the prepared baking pan and press into an even layer.
  5. In a small bowl, combine sugar and cinnamon for the topping, then sprinkle over the batter.
  6. Bake for 20-25 minutes or until the top is just turning golden.
  7. Allow to cool for 30 minutes before slicing and serving.
