Tater tot casserole is quintessential comfort food. For starters, it has potatoes, which I’m always a fan of. Then there’s the warm, creamy sauce, some veggies, protein, and of course, a layer of cheese on top. This version swaps out the traditional ground beef for chicken and is prepared in the slow cooker. That’s right, all you have to do for this recipe is dump everything in the slow cooker and cook for 4-5 hours. That’s my kind of meal! Check out how easy it is to throw together in the video below!
Not only did we swap out beef for chicken, but we added bacon bits as well. Chicken, tater tots, and bacon? Oh yeah, we went there. And we don’t regret anything.
Start off this easy recipe by spraying down the slow cooker with nonstick cooking spray. Then, layer half of the frozen tater tots on the bottom of the slow cooker. Sprinkle 1/3 of the bacon bits on top, along with 1/3 of the shredded cheese.
Next, add diced chicken to the slow cooker and season with garlic powder, Italian seasoning, salt, and pepper, followed by 1/2 of the frozen veggies. Sprinkle another 1/3 of the bacon pieces and a 1/3 of shredded cheese, followed by the rest of the frozen tater tots and frozen veggies. Finish with the remaining cheese and bacon bits.
All that’s left to do is pour half and half over everything and cook on low for 4-6 hours, or until chicken is cooked and tender. The creamy half and half mixes with the seasonings as well as the juices from the veggies and chicken to create a mouthwatering sauce!

Ingredients
- 1 (32 oz) bag frozen tater tots
- 1 (9-12 0z) bag mixed frozen veggies
- 1 (3 oz) bag bacon bits
- 1 pound boneless, skinless chicken breasts, diced
- 2 cups shredded cheddar cheese
- 3/4 cup half and half
- 2 teaspoons garlic powder
