Roasted Ranch Cauliflower
Big flavor from an easy homemade ranch sauce.

Roasted cauliflower is one of the most versatile veggies dishes you can make. The cauliflower takes on the flavors of different spices beautifully. And, when roasted the florets become tender in the middle and a little charred on top. This roasted ranch cauliflower takes that concept up a notch with some tasty homemade ranch to coat the cauliflower pieces in. Let me tell you it’s so much more flavorful when made from scratch!

This homemade ranch is easy to make with ingredients you may already have on hand. Instead of the buttermilk that’s usually found in ranch we’re using Greek yogurt to give that creamy, rich flavor we’re after.

Toss the chopped cauliflower in the ranch sauce, but leave a little of the ranch in another bowl for dipping later. You don’t want to miss this step!

Bake this and when the tops are golden brown it’s ready. It’s one of the easiest veggie dishes to make and yet it has a big payoff when it comes to flavor. Pair this with chicken or beef or even fish for a tasty meal without a lot of work. In fact the hardest part of this recipe is cutting the cauliflower!

Then dip your cauliflower in the sauce or serve a little dollop on top of each serving for an extra hit of ranch in each bite.

Roasted Ranch Cauliflower

Ingredients
- 1/2 cup plain Greek yogurt
- 1/2 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried chives
- 1 teaspoon dried dill
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large head cauliflower, cut into medium florets
- freshly chopped parsley for garnish
Preparation
- Whisk together yogurt, mayonnaise, and spices. Pour 3/4 of the sauce over over cauliflower in large bowl. Reserve remaining ranch sauce.
- Toss cauliflower in ranch to coat each piece. Cover and refrigerate for 30 minutes to marinate.
- Preheat oven to 400˚F. Add cauliflower to lined baking sheet and bake for 35-40 minutes.
- Transfer cauliflower to serving dish and sprinkle with parsley. Serve with remaining sauce to dip in.
