Pumpkin S’Mores Cookies
S’Mores and pumpkin spice come together for one delicious cookie!
I’m so excited to share this Pumpkin S’More Cookie recipe with you today! These delicious cookies have all of my favorite fall flavors. With pumpkin puree, pumpkin spice, peanut butter, chocolate chunks, and marshmallows, these decadent cookies are sure to be a hit.
I absolutely love how they turned out. Soft, chewy, and oh so tasty! The pumpkin puree makes these cookies dense and moist, while the peanut butter rounds out the earthy flavors. Throw in all the sugary goodness of chocolate and marshmallows, and you have one amazing cookie that’s sure to please a crowd!
To get started on these delightful fall treats, preheat the oven to 375 F and line a baking sheet with parchment paper. Then, in a large bowl, mix together peanut butter, brown sugar, pumpkin puree, vanilla, and egg until well combined.
In a separate bowl whisk together flour, pumpkin pie spice, baking soda, and salt. Add dry ingredients to the wet and stir until well-mixed. Fold in chocolate chips. Next comes the marshmallows, but don’t mix them in!
Instead of folding the marshmallows into the batter like the chocolate chips, place 2-3 marshmallows into the cookie scoop (or rounded tablespoon) and then scoop up the cookie batter. You’ll want them to be on the top of the batter but still mixed in with the cookie dough.
Continue scooping the dough and placing the cookies a few inches apart on the baking sheet. Sprinkle extra chocolate chips or chunks on each cookie if desired. Bake for 10-12 minutes. Remove from oven, let cool and enjoy!

Ingredients
- 1/2 cup creamy peanut butter
- 1/2 cup light brown sugar
- 1 egg
- 1/4 cup pumpkin puree
- 2 teaspoons vanilla extract
- 1/4 cup flour
- 2 teaspoon pumpkin pie spice
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup mini marshmallows
- 1/2 cup semi-sweet chocolate chips or chunks
Preparation
- Preheat oven to 375 F and line a baking sheet with parchment paper.
