Peaches & Cream Hori-16

The only bad thing about peach season is how terribly short it is. I wish I could start every day with a fresh, juicy peach! While that might not be possible, the second best thing is taking full advantage while they are in season. From pies to cakes, jams to salsas— it’s hard to go wrong when you’re working with fresh produce. But, one of my favorite new peach recipes is this Peach & Cream Spread. Serve it on toast, pancakes, waffles, or even on a sandwich. However you use it, it’s sure to be love at first bite.

The great thing about this recipe is that it’s easy as can be. No cooking required! Start out by whipping the cream cheese and butter until light and airy. Next, pulse the peaches in a food processor a few times until finely chopped, but not pureed. This step can also be done by hand, it just required a bit more effort. Mix the peaches into the butter mixture along with the powdered sugar and a touch of salt. Mix the spread for another 1-2 minutes to really bring those flavors together.

Transfer the mixture to an airtight container and let is set in the fridge for at least 1 hour to allow the flavor to further develop. I find it tastes better the day after its made, so I recommend planning ahead if you’re making this for a big breakfast or brunch!
