Peaches are often relegated to salads or pies, but seldom are they in the form of a single-serve dessert. Here, these Peach Puff Ring-a-lings portion out peaches into a super cute donut-ring-like shape and pair them with puff pastry, making the perfect single plated version of pie possible.

Slice the peaches into disks and cut out the centers, creating the donut shape. A little coating of sugar adds a bit of sweetness. Thread the puff pastry through the hole in the center of the peach rings and wrap the dough around the entirety of the ring.

Brushed with an egg wash, sprinkled with sugar, and then baked until golden, these Peach Puff Ring-a-lings are done. You can serve these at room temperature, or you can serve them warm from the oven.

A dollop of Cool Whip or fresh whipped cream gives you a wonderful version of peaches and cream. The puff pastry on the outside is flaky, golden, and has a satisfyingly crackly, crispy bite. The peach interior is soft and super tender.

The coating of sugar highlights the natural sweetness of the peaches without overpowering the natural peach flavor.

Ingredients
  • 4 white peaches
  • 1 cup plus 1 tablespoons granulated sugar, divided
  • 1 package puff pastry, defrosted
  • 2 tablespoons whole milk
  • 1 large egg, lightly beaten
  • Whipped cream or Cool Whip, for garnish
Preparation
  1. Preheat oven to 350°F and line a large baking sheet with parchment paper, set aside.
  2. Avoiding the pits, slice the peaches into disks, about 3 to 4 slices per peach. Using a small circle cookie-cutter, cut out the center of each disk, creating a donut-like shape.
  3. On a lightly floured surface roll out puff pastry. Cut the pastry into strips.
  4. Put 1 cup sugar in a large bowl and toss each peach disk in sugar.
  5. Taking one strip of the puff pastry, thread the dough through the center of the peach ring and wrap it around the entirety of the peach ring, placing onto the prepared baking sheet. Repeat this process with the remaining peach ring.
  6. Whisk milk and egg together and brush the mixture over each peach ring. Sprinkle each ring with remaining granulated sugar.
  7. Bake for 15 to 18 minutes or until the dough is golden in color.
  8. Let the rings cool on the baking sheet for 5 to 10 minutes before serving. Top with whipped cream or Cool Whip and enjoy!
