Baking is about more than just ingredients and following a recipe. You have to have the right tools – and know how to use them! When it comes to baking, the most important tool at your disposal is the oven. Obviously. Using the oven properly is about so much more than turning it on and setting a timer, however.

The first thing to consider is the actual temperature of the oven. As you can see from the picture above, just a few degrees higher or lower can really impact the outcome of your cookies. Most ovens are inaccurate in how they measure temperature, so it’s important to get your own oven thermometer.

A lot of people don’t know the difference between a convection oven and a conventional oven. Here in America we mostly have conventional ovens, where the heat source is stationary – usually at the bottom of the oven. A convection oven has a fan in the back that evenly distributes the heat. Make sure you know which oven you have so you can adjust temperatures as necessary!
