If you’re using wooden skewers, be sure to soak them in water beforehand to prevent burning in the oven. I like to do this step first so it doesn’t hold me up later. Next, dice up a handful of olives into small pieces and lay out your thawed puff pastry sheets on a cutting board. Sprinkle half of the diced olives evenly over each sheet, then use a rolling pin to gently press the olives into the dough.
Now for the assembly! Slice the dough into strips about 1 inch thick, then skewer the end of a strip, followed by an olive. Fold the dough around the olive and skewer it again, repeating the process until you reach the end of the strip.

Olive Bread Skewers

Ingredients
- 1 (17 oz) package frozen puff pastry, thawed
- 2 (10 oz) jars pitted green olives, drained
- 1 (10 oz) jar pitted black olives, drained

Preparation
- If using wooden skewers, soak them in a dish of water for 15 minutes before assembling.
- Preheat oven to 375 degrees F and line a baking sheet with parchment paper. Set aside.
- Spoon out about 5 olives of each color and place them on a cutting board. Dice into small pieces.
- On another large cutting board, unroll thawed puff pastry and sprinkle half the diced olives evenly over the top. Use a rolling pin to lightly press them into the dough, then repeat with the second sheet of dough and remaining diced olives.
- Slice dough into strips about 1 inch thick.
- Skewer the end of the strip of dough, then skewer an olive. Fold the dough around the olive and skewer it again. Repeat the process alternating the color of olive until you reach the end of the dough. Place completed skewers on the prepared baking sheet.
- Bake skewers for 18-20 minutes or until pastry is golden.
