Making Mealtime Meaningful: Discover how we're giving back with the 12T Cares program →

Our household is either chock full of bananas or we cannot find a single one. There’s never any in-between. And we will have phases where all we want to eat are bananas and then we can go weeks at a time without seeing one. Luckily, we have a number of ways to get rid of our extra bananas, and banana bread is one of our favorites in these scenarios.

It’s always a good time for banana bread and we do not care who agrees with us on this one. Of course, it has been pretty hot lately, and for many of us, that keeps us from wanting to turn the oven to do any baking. But what if we told that there was a better way? This recipe shared by a professional chef is perfect when you’re pinched on time, don’t want to use the oven, or don’t have an oven to use!

And it’s a super simple recipe too! All you need are bananas, eggs, and flour.

There is one awesome twist on this recipe, though. You will get the chance to add some chocolate chips. Peanut butter chips can also be used if you’re truly looking to let your hair down a little bit. You can bake this bread in the oven if you would like, but that takes all of the fun out of it. To get the full effect of this excellent recipe, you’ll actually want to cook it in the microwave.

Before you get started, make sure that you have a ceramic, glass, or silicone bread pan. Metal bread pans should never be put into the microwave under any circumstances. The recipe comes from the good folks at Bigger Bolder Baking, but Gemma’s not responsible for this one. Her husband and her son Georgie are taking the reins on this one.

Gemma does make a surprise guest appearance and you’ll want to watch this clip until the very end to see for yourself.

“Wow! Thanks you two for that amazing recipe. I’m not good with using an
oven. I make all my food in the microwave. This will be very helpful. Thank you and stay safe,” wrote one of her followers and we could not agree more.

Be sure to try this one out on your own!
