Every once in a while, something truly extraordinary happens. Two flavors come together to create something that’s better than just the sum of its parts. Peanut butter and jelly. Macaroni and cheese. Hamburgers and fries. And now… mashed potatoes and pizza!

I had my first glorious taste of mashed potato pizza back in college. It was from a little dive bar in the middle of campus. I was hooked! It’s been years since I thought about it, but when I stumbled upon this recipe, I knew I had to give it a whirl! And I’m so glad I did.

This recipe starts out with refrigerated pizza dough to make things easy. Then, you’ll make a mashed potato mixture of Yukon gold potatoes, butter, sour cream, cream cheese, and a few spices. Spread this mixture over the crust and top with bacon, cheese, more sour cream, and chives. Seriously, this stuff is decadent and as incredible as it sounds!

To get started on this dinner, preheat the oven to 415F. Then, line a baking sheet with parchment paper and set aside. Next, place the chopped potatoes in a large pot and fill with cold water to an inch above the top of the potatoes. Simmer on the stovetop until potatoes are fork-tender.

Drain the potatoes and add butter, cream cheese, sour cream, salt, pepper, garlic, and parsley. Mash until smooth. Set aside. Roll out the dough onto the pan, shaping it and brushing it lightly with olive oil. Spread the mashed potatoes evenly on top of the pizza crust. Sprinkle with cheddar cheese.

Bake until cheese is starting to brown and the crust is cooked through, about 10 – 14 minutes. Top the pizza with the crumbled bacon and chives. Slice and serve the pizza with sour cream for topping.   • 1 refrigerated pizza dough crust
  • 5 small Yukon Gold potatoes, peeled and chopped
  • 4 tablespoons butter
  • 2 tablespoons whipped cream cheese
  • 2 tablespoons sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1 1/2 cups (6 oz) cheddar cheese, shredded
  • 8 slices bacon, cooked and crumbled
  • Top with fresh chives and sour cream
