If you put ‘lazy’ in a recipe title, you have my attention. While I’m not always looking for a kitchen shortcut I certainly appreciate them when it means I can get a baked good out of the oven and into my mouth faster or with less effort. So Lazy Cake Cookies are right up my alley. They’re like cookie bars — but they rely on a box of cake mix instead of a from-scratch batter. Cakey chocolate chip cookies that take five minutes to mix up — I can’t imagine anything better.
You only need five things here: yellow cake mix, eggs, butter, vanilla, and chocolate chips. Basically, the cake mix is replacing all your flour, sugar, baking soda, etc so you almost don’t even need to get out your measuring cups.
And then all you do is stir it all together. Wooden spoons are fine here, you don’t need to get the hand mixer out of the back of the cupboard. Just stir it all up and spread out the mixture in a big ol’ 9×13 baking dish.
And then you bake, which honestly takes far longer than the prep process but is still only twenty minutes.
And then the best part — you get to eat them! These are soft and just sweet enough with a very generous amount of melty ooey-gooey chocolate. Heaven with a glass of milk!
