
Sometimes it’s the name of a recipe that catches you, and that’s just what happened here. Stupid Pie. It immediately had me wondering… Is it stupid because the ingredient list is kind of weird? (It is.) Is it stupid because it’s stupid easy? (It is.) Or, is it because it’s stupid good? (Spoiler alert, it is.)

What Ingredients Are in Stupid Pie?
It’s a very short list! Stupid Pie has:
- Egg whites.
- White sugar.
- Ritz crackers.
- Chopped pecans.
- Vanilla.
- A whole tub of Cool Whip.
Have you ever heard of a pie like that? I hadn’t.

How Do You Make Stupid Pie?
It’s a great question. After seeing that ingredients list, I was wondering how it would all come together.
Here’s how it goes:

You beat the egg whites until they get nice and foamy and then gradually add the sugar while you beat the egg whites into stiff peaks.
Next, you’ll crush up those crackers, but just roughly, you don’t want fine crumbs here. The crackers and pecans get stirred into the egg whites (with the vanilla too) and that gets spread into a greased pie pan.

It bakes until it sets and is lightly golden, which takes about 30 minutes, maybe less. Once it cools, you spread that whipped topping over it and slice and serve it. You can opt to chill it if you’d like, but it’s good to go right away.

How Does it Taste?
It’s stupid good! It’s a really great, really simple pie, and it was unexpectedly delicious. It has plenty of crunch thanks to the pecans, but the crackers give it structure while those beaten egg whites give it a lovely meringue chew. Best of all, it’s salty and sweet and the same time and while that bottom layer is pretty rich, the whipped topping balances it all out. (Bonus points if you opted to make homemade whipped cream instead.)

Ingredients
- 3 egg whites
- 1 cup granulated sugar
- 23 Ritz crackers
- 1 cup chopped pecans
- 1 teaspoon vanilla extract
- 8 oz frozen whipped topping (such as Cool Whip), thawed
Preparation
- Preheat oven to 350°F and grease a 9-inch pie plate with nonstick spray or butter. Set aside.
- In a medium mixing bowl, beat egg whites with an electric mixer on low until foamy. Increase speed and continue beating while gradually adding sugar.
- Once sugar is incorporated, increase mixer to high and continue beating until stiff peaks form. Set aside.
- Crush crackers roughly, but not all the way to crumbs. Stir into whipped egg whites gently, along with the pecans and the vanilla.
- Spread mixture in prepared pie pan and bake until lightly golden, 25-30 minutes.
- Let cool completely, then top with whipped topping. Can be served right away or chilled for a couple hours to set up first.
