I’m always excited to try out new recipes using this powerhouse vegetable and when I came across this Greek Cauliflower Bake, I knew it was a must-try! Packed with tomatoes, olives, and feta, this casserole can hold its own as a side or a light main dish. If you appreciate Greek flavors then you are going to love this one.
Start things out by adding the cherry tomatoes, olives, and garlic to your baking dish and drizzling with a generous dose of olive oil. Pour the feta cheese into the center and pop it in the oven for about 20 minutes, or until the tomatoes begin to pop. As the sauce ingredients bake, steam the cauliflower just until tender. You’ll then mash the baked tomato mixture to create an easy sauce. Toss in the cauliflower, sprinkle cheese over the top, and bake the dish for an additional 20 minutes. Once the cheese is beginning to brown you’ll know it’s ready to eat!

Greek Cauliflower Bake

Ingredients
- 2 cups fresh cherry tomatoes
- ½ cup pitted kalamata olives
- 4 cloves garlic, roughly chopped
- 1 1/2 tablespoons olive oil
- ½ teaspoon red pepper flakes
- Salt & pepper to taste
- 6 oz crumbled feta cheese
- 1 head cauliflower, cut into florets
- 1 ½ cups mozzarella, shredded
- ¼ cup parmesan, grated
Preparation
- Preheat oven to 400 degrees F.
- Add tomatoes, olives, and garlic to a 9x13-inch baking dish. Toss with olive oil and season with salt, pepper, and red pepper flakes.
- Pour feta into the center of the dish and bake for 18-20 minutes or until tomatoes are tender.
- As the tomato dish bakes, steam cauliflower florets for 4-5 minutes or until slightly tender. Drain well.
- Remove dish from oven then use a fork or masher to burst tomatoes and mix to create a sauce.
- Add cauliflower to the dish and mix. Sprinkle mozzarella and parmesan over the top.
- Bake for 20-24 minutes or until cheese begins to brown. Serve hot.
