Superfine sugar. Used in lemonade and sweet teas, superfine sugar is the perfect baking swap. Nowadays this variety of sugar is hard to find, so there’s an easy from-scratch method to make superfine sugar.

Normal granulated sugar is added to a blender and then blended for a minute or so. Then the blender is turned off and the sugar is stirred around. Stirring will ensure that all of the sugar is properly broken down. Sugar is blended again for another minute or so. The sugar is transferred into an airtight plastic container and used as needed. The superfine sugar makes for a more delicate crumb that has a smooth melt-in-your-mouth quality to it. It’s a simple swap that can be prepared in big batches giving you the levity you’re looking for!
